Easter Bunny Coconut Cake

Easy to make and yet so effective :)

Ingredients:

3 sticks of butter, softened
2 1/2 cups sugar
6 extra-large eggs, at room temperature
1 1/2 teaspoons vanilla
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup milk
4 ounces sweetened shredded coconut

Cream Cheese Icing
Coconut

Preheat oven to 350 degrees.

In a mixer fitted with the paddle attachment.  Cream together butter and sugar.  Add eggs and vanilla.

In a separate bowl mix together flour, baking powder, soda, salt and coconut.  Add it to the butter mixture a little at a time alternating with the milk.  End with adding flour coconut mixture.  Do not over mix.

Line baking tin with parchment paper and pour mixture into tin.

Bake the cake for 30 minutes and cupcakes for 15.

Cream Cheese Icing

2 sticks of butter, softened
1 block of cream cheese, softened
1 pound of powdered sugar
1 teaspoon of vanilla
1/4 cup of milk

Cream together butter and cream cheese.  Add powdered sugar, vanilla and milk.  Stir together until creamy - do not whip.   

How to make the actual bunny:
1) Make a base for the cake to sit on by wrapping a piece of cardboard in wax paper
2) Smear some icing on the base to help the cake stick.
3) Cut a notch out of the top to form the head.  Use part of the scrap to create a little tail.
4) Cover the bunny in icing.  You may need to put it in the refrigerator then add a second coat if you like a lot of icing like me.5) Cover the outside with flaked coconut.  You can put some artificial moss or grass around the bunny or green colour coconut.
6) The ears you can cut out of textured card board and paint with watercolor paints.  
7) You can add a little pink nose, too, but Jennifer kept her bunny blank...

Easter picnic party ideas for the little ones

Easter is one of those holidays that kids look forward to. It's filled with colour, activity and lots of Easter eggs. It's a holiday filled with love and family closeness. So why not invite your family and friends and do one big celebration?

Below are some ideas of table settings for a Kids Easter Picnic.

With Easter Eggs being so colourful, you can let your imagination go wild. The artificial grass strip brings the outdoors indoors and breaks the pink a bit.


I just love the below setting. I love the log chairs and the cotton wool bunny tails. Too cute.


Combine your beautiful picnic setting with a Egg-citing Easter Egg hunt and some outdoor games and your little guests will be sure to have a blast.

Easter Kids Snack Ideas

We spend lots of time browsing the internet for inspiration and ideas and the Easter Theme has delivered wonderful results. Below we share our favourite Easter snack and treat ideas. 

My favourite are the bunny tail drink stirrers made from cotton wool and straws and the  carrot strawberry pudding cups. I must the green cutlery wrapped in orange serviette is very original.

DIY Love Fortune Cookies for Valentine's Day

This is such a romantic idea for Valentine's day. I stumbled across this while looking for a romantic DIY ideas. I absolutely love sheknows.com, always filled with fun things to make yourself.



Fruit Roll-Ups fortune cookie valentines

One Fruit Roll-Up makes one fortune cookie, so a box of 10 Fruit Roll-Ups will make 10 valentines.

Ingredients and supplies:

  • One box of Fruit Roll-Ups
  • Permanent marker
  • Parchment paper (Don't use plain paper; it will stick to the Fruit roll-up.)
  • One 2-inch round cookie cutter

Directions:

1 Create your message
Write messages with a permanent ink marker on parchment paper.

2 Prepare your Fruit Roll-Ups
Unroll one Fruit Roll-Up (any flavor you prefer) and cut into four squares.

3 Slice with cookie cutters
Stack the four squares on top of each other and cut with 2-inch round cookie cutter.

4 Insert the message
Place message in the center of the stacked circles and fold in half, like a taco.

5 Form fortune cookies
Grab the corners and crease in the middle, pinching to form the fortune cookie shape. Pinch the shape together in the middle until it sticks and stays folded.

Pass them out to your valentines!

Strawberry Angel Food Skillet Cake

This is an easy and delicious dessert recipe, perfect for Valentine's day by Cat Bowen courtesy of http://breakfasttobed.com.


Prep Time: 15 minutes
Cook Time:
25 minutes

Ingredients (serves 6-8)
  • 1 cup liquid egg whites
  • 1 tsp cream of tartar
  • 1/2 tsp salt
  • 1 cup flour
  • 1/2 cup sugar
  • 1 tsp almond extract
  • sliced strawberries
  • cooking spray
Instructions
Preheat oven to 180'C
Whip egg whites and cream of tartar in a mixer with whisk attachment on med-high until medium peaks form
Add in sugar, a few tbsp at a time and turn mixer to high
Add salt, and extract
When firm peaks form (like a liquid marshmallow) turn off mixer
Sift in flour, 1/3 at a time, folding to combine
Pour into greased cast-iron skillet
Top with sliced strawberries
Bake for 25-35 minutes or until edges are golden brown
